Binchotan Bar and Grill at The Fairmont Orchid in the Mauna Lani Resort

 

Explore the long-running, creative culinary exchange between Hawai`i and Japan firsthand at Binchotan, a traditional northern Japanese grill restaurant. The method the restaurant uses is called robatayaki: the centuries-old practice of fireside cooking. And what it is, is delicious.

Sweet, delicate seafood and seasonal local vegetables are fire-roasted to a juicy, tender inside and pleasingly charred outside, and served sizzling hot off the grill. Tiger prawns and mahi-mahi, wagyu beef, and smoked pork belly with shishito peppers are a few of the items and the aroma is nothing less than divine. Share robata on the terrace or order handcrafted standouts like sea urchin eggs, octopus and abalone at the 14-seat sushi bar, accompanied by artisan cocktails.

The menu features plates that are meant to be shared and `ohana (family) platters designed for a feast.

Dinner 5:30 p.m.-9:00 p.m. (Friday through Tuesday)
